Characteristics:
Salami is the most popular cured meat belonging to the ancient farming tradition and is produced using meat from our semi-free range pigs fed with raw materials. The meat mixture is made up of pork chuck, 70% of which is lean meat and 30% of fatty parts. The meat is coarsely ground and seasoned with salt and pepper, then placed into a natural casing using the so-called budello gentile, a smooth thick intestine that keeps the meat soft even after prolonged curing.
Ideal with bread and a nice glass of farm Lambrusco.
